Vegetarian Side Dish
Ingredients:
1 medium onion, chopped
4 gloves garlic, chopped
1/3 cup oil, for sautéing
2” ginger, chopped
2” turmeric, chopped
3 rainbow bell peppers, chopped
4 medium tomatoes, chopped
2 zucchinis, chopped
3 medium potatoes, cubed
3 cups water
Seasonings:
1/3 teaspoon salt
1/3 teaspoon Mrs. Dash seasoning
½ teaspoon paprika
Place 1/3 cup of oil in a pan along with the onion, garlic, and peppers. Sauté the onion, garlic, and peppers for 7 minutes, stirring constantly. Add the ginger, turmeric, tomatoes, zucchinis, potatoes, 2 cups of water, and the seasonings. Simmer for 20 minutes or until veggies are soft.
